the new chef de cuisine at our Downtown SF location. He’s originally from Rome, where he started cooking at 13 (!!). Skilled at not only making but eating crave-able pasta (he once took down 5 orders of pasta at Belotti—one of his Oakland go-tos!), Mattia couldn’t be a better fit for our Roman-style restaurant. Of his signature carbonara—it’s coming soon to the Dela menu—he says, “Give me 30 days.” We can’t wait.
