Belga’s new chef de cuisine. Originally from Sonoma, Laurance credits his NorCal upbringing in a family of amateur home cooks with his love of Latin-American and Cal-Mexican cuisine; every year, his family gets together to make large batches of mole poblano to freeze and have for the rest of the year. Sounds like our kind of party!
